Johnnie's Favorite Coleslaw Recipe

Johnnie is our Billing Supervisor.  She has worked at SWRE for many years.  Her coleslaw is one of our many favorite recipes that she has shared with us.  The recipe originally came from her grandmother.

Ingredients:

 

1 Package Shredded Cabbage

1/2 Chopped Green Pepper & Celery

1/2 Sweet Onion (chopped) or purple onion

1 Cup Shredded Carrots

 

DRESSING:

1/2 Cup Sugar

1 tsp Salt

3/4 Cup Vegetable Oil

1 tsp Dry Mustard

1 tsp Celery Seed

1/4 tsp Fresh Ground Black Pepper

3/4 Cup White Vinegar

 

Instructions:

 

In large bowl, combine coleslaw, bell pepper, celery , onion and carrots.

In a saucepan over medium heat, combine remaining ingredients; bring to a boil. Simmer, stirring, until sugar is dissolve; pour over coleslaw little at a time, toss wellCover and refrigerate until thoroughly chilled. 

 

Slaw goes great on top of a pulled-pork sandwich.  Can stay fresh in a refridgerator for up to one month if in a plastic bowl with a lid.
